Rice Noodles in Spicy Coconut-Lime Sauce

This recipe for rice noodles with coconut lime dressing by Sanskriti Bist is perfect for overcast monsoon days. Rice Noodles in Spicy Coconut-Lime Sauce

Ingredients For the Dressing
1/4th cup Only Earth coconut milk
½ tbsp lime juice
1 tbsp brown sugar
2 tbsp lemongrass, minced
2 red chillies, chopped
3-4 cloves garlic, chopped
2 tbsp cilantro, chopped
2 tbsp soy sauce

Ingredients for the Bowl
150g rice noodles
1/3rd cup red cabbage, chopped into strips
1/3rd cup cucumber, chopped into strips
1/3rd cup carrot, chopped into strips or peeled 
Handful of mint and coriander, chopped
1/4th cup tofu, cut in squares
1 tbsp peanuts, roasted and crushed

Method 
To make the coconut lime dressing mix all of the ingredients into the bowl. 
Now cook the rice noodles according to the instructions of the package. 
Take a wok and in medium heat, add a neutral oil and pan fry the tofu till cooked. This should take 3-4 minutes.
Now, plate the bowl. Add in the cooked noodles, chopped red cabbage, cucumber, carrots, tofu, mint, coriander and crushed peanuts. Add in the dressing and mix and serve.
