
December’s recipe contest called for warm and cosy beverage recipes, the ones you return to through the winter months, the ones you can always depend on to bring some holiday cheer through the shorter days and long nights. Mariam Begg’s vegan egg nog with brandy is a delicious and creamy drink, and comes together in a quick blitz. All you need is your trusty blender and a couple of pantry-cupboard ingredients.
MARIAM BEGG’S V'EGG NOG
Ingredients
2 cups almond milk (or 3 spoons almond butter blended with 1.5 cups water)
1/2 cup cashew nut
Nutmeg, a pinch
3tbsp liquid natural sweetener (Maple syrup, or date syrup)
1/4 tsp cinnamon
1/2 cup brandy
2 drops of vanilla essence
Method
Blitz all the ingredients together until well mixed.
Refrigerate or serve warm, depending on your preference.
Garnish with cinnamon powder before serving.
