Coconut Milk & Banana Batter Waffles

Sanskriti Bist’s lazy Sunday breakfast is a mash-up between banana bread and vegan waffles, using Only Earth’s coconut milk.

I don’t eat a lot of fruit, but I love baking with bananas. This banana waffle recipe is something I've been making for a couple of years. Overripe bananas are best of course, but regular bananas work great too. And this is perfect for a lazy Sunday breakfast, because I’m usually too lazy to dress up a waffle and make it look pretty, so I simply smash the bananas into the batter. It’s halfway between banana bread and a waffle, and I can honestly say, it’s the best of both worlds.


RECIPE FOR VEGAN WAFFLES WITH ONLY EARTH COCONUT MILK

Ingredients
1/2th cup (135g) all purpose flour
1 tsp naking powder
1 cup (200ml) Only Earth unsweetened coconut milk
1/2 large ripe banana, smashed
1 tsp vanilla extract

Method
Preheat the waffle iron and slightly brush the pan with oil
In a mixing bowl, mix together the flour and baking powder
Add the coconut milk, banana and vanilla extract and mix
 Add in the batter to the waffle iron and cook for 5 minutes

 Serve with fresh fruits like blueberries, strawberries, mango or with maple syrup or jam
