Beef Devil Fry: An Anglo-Indian Speciality Using Leftovers

This recipe is a wonderful way to repurpose roast meats, especially made during Christmas. Ruth Pereira learned this recipe from her mother, who in turn picked it up from her husband. Tossed with fried potatoes, and a heady hit of chillies, it is as spicy as it is delicious. According to Ruth, the secret to an exceptional roast is marinating the meat for as long as possible. Recipe for Beef Devil Fry
Ingredients
400g meat, shredded (ideally, leftover roast pork, beef or chicken)
2 large onions, chopped
5 dry red chillies, crushed
2 potatoes, prepped like home-style French fries
1 tbsp chilli powder
1 tbsp pepper, crushed
Method
In a pan, add a couple of tablespoons of oil, and brown the onions.
Add in the chillies, potatoes, spice powders followed by the shredded meat.
Adjust seasoning. Serve hot.
