Easy Breezy Weeknight Roast Chicken

This is a dish that is ideal for a bit of mid-week indulgence. With a quick 10-minute prep in the morning, there’s flavourful, garlicky roast chicken with perfectly crisp skin, waiting for you at dinnertime. We partnered with our friends at SNAP!N for this recipe; their Piri Piri mix and Crunchy Garlic are a great way to take roast dinner up a few notches.

Recipe: Butter Garlic Piri Piri Chicken 

Ingredients
1 whole chicken, skin-on 
50 grams butter, softened 
1 tablespoon brown sugar 
2 tablespoon SNAP!N Piri Piri mix 
1 tablespoon SNAP!N Crunchy Garlic 
Salt 

Method
Clean the chicken and pat it dry. 
Make the spice rub for the chicken by combining the brown sugar, piri-piri mix, and crunchy garlic.  
Rub the butter all over the skin and inside the cavity. 
Liberally salt the chicken all over, including inside the cavity. 
Spread the spice rub all over the chicken. 
Allow to sit for at least 2 hours, but best if you can cover loosely and  refrigerate overnight. 
Roast in an oven preheated to 250 degree Celsius, breast side up for 25 minutes. 
Remove from oven, flip the chicken and roast for another 25 minutes. Flip back over for 5-10 minutes to crisp up the skin and remove from oven. Your chicken is ready when it is brown all over and the juices run clear when a knife inserted  between the leg and the thigh. 
Cover with foil and allow the chicken to rest for 10 minutes before serving.
