Thressi John Kottukapally’s Tharavu Roast

Roast and fried duck, accompanied by caramelised onions and potatoes, this is a special-occasion dish from the Suriani community of Kerala.

Ingredients
1 kg dressed duck
20 g ginger
30 g garlic
300 g onions
2 tbsp pepper powder
1/2 tsp turmeric powder
1 tbsp vinegar
Salt

For serving
300 grams potatoes, cut into long broad strips
250 grams onions, finely sliced

Method
Fry the sliced onions till golden brown and crisp.
Fry the potatoes till golden in colour.
Keep aside the fried onions and potatoes.
Prepare the duck and cut into big pieces.
Grind the ginger, garlic and onions to a fine paste (can be ground in a mixer)
Mix pepper and turmeric to the ground paste.
Add the duck pieces along with vinegar, salt and cook till done.
Remove from fire.
Remove the duck pieces and fry lightly and keep aside.
In the same oil, add the gravy and cook till the gravy thickens.
Add the fried duck pieces and cook for few minutes.
Remove and serve hot,  with fried onions and potatoes.
