A Sindhi Recipe for Swanjharo jo Raito

This unusual raita is a Sindhi speciality. Although moringa leaves and drumsticks get a lot of attention, the lesser known moringa flower is an unsung hero that is allowed to shine in this subtle and refreshing raita. Roma, whose recipe this is, writes, “Sindhis don’t like wastage and make the best use of all ingredients available, and these flowers are an example of this value.”

Recipe: Swanjharo jo Raito

(Serves 2-13)
Ingredients
1/2 cup dried moringa flowers
1 cup yogurt, whisked until smooth
1 tbsp chopped coriander leaves
1/2 green chilli, finely chopped
1 tsp cumin powder
1/2 tsp red chilli powder
Salt to taste

Method
Wash the dried moringa flowers thoroughly and pressure cook for 4 - 5 whistles with 1 cup water and salt.
Drain the water well from the boiled flowers.
Combine with beaten yogurt, chopped green chillies and salt. Add water to adjust consistency.
Sprinkle cumin powder and red chilli powder.
Garnish with chopped coriander leaves.
Serve cold.
