We'll Be Sipping on this Ice Apple Cooler All Summer

This family recipe is one we’d enjoy every summer, at my grandmother's house in Chennai. I personally love the texture of the fruit, and how it instantly hydrates you from within. For an equally delicious vegan sub, you can skip cow’s milk and add a few cubes of ice instead. The nongu, if cut really small, almost feels like boba, a drink that’s a huge favourite for its fun textural element.

Ayesha Jamal’s Refreshing Ice Apple Cooler

Ingredients
1/2 cup nongu (ice apple), chopped into small cubes
1 cup sweetened coconut milk
1/2 cup milk (to thin out the coconut milk if its too rich/thick for your taste)
Sugar, to taste

Method
Place the chopped ice apple (and its juices) into a bowl
Pour in the coconut milk and milk (or water, if you want a vegan option)
Add in the sugar and stir to dissolve
Place in the refrigerator for a few hours
Serve cold, with a cube of ice
