A Smoked Beef Stew from Nagaland

RECIPE: Zubza Smoked Beef Stew
Ingredients
2 tsp zati or axone (fermented soya)
2 tomatoes, cut into wedges
4 green chilis, slit
6 garlic pods, crushed to a paste
2 inches ginger crushed to a paste
200 g pumpkin, diced
10-12 green beans
2 potatoes, diced
500 g smoked beef, cut into strips
Few sprigs of Naga dhania
A handful of kidney beans
1 tsp Kashmir chilli powder
½ tsp local red chilli powder
Method
Add a little oil in a heavy-bottomed pan
When hot, add in the ginger, garlic and green chilli for a quick stir-fry
Add 4 cups water. When it boils, add the remaining ingredients (water should cover the ingredients), salt to taste.
Bring it to a boil again, then simmer for about 30 mins on a slow flame, until it’s all cooked and the pumpkin is soft.
