The Food Nerd Festival 2024, in its second edition, will be travelling to two cities, hosting 4 immersive workshops that dive deep into niche culinary topics through hands-on learning experiences. The Food Nerd Festival was created as a platform to celebrate the F&B industry by providing a collaborative playground for food enthusiasts.
This year’s workshops, called the Food Nerd Labs, are anchored around 4 core themes—Salt, Fat, Acid, and Heat—designed to guide you through unique culinary experiences that are the building blocks to creating flavour. The workshops will be held at central locations in two cities, each fronted by celebrated chefs from the county’s varied culinary landscape.

Mumbai: November 23rd, Masque Lab
SALT with Chefs Gautam Krishnankutty & Bala Menon This workshop dives into the ancient art of meat curing and pickling with bold, time-tested techniques that preserve flavours like magic. In their second year hosting a workshop at the festival, the chefs are excited to be back. "The Food Nerd Festival is a fantastic way for chefs to share their craft, teaching techniques and inspiring others to try new methods."
FAT with Chef Heena Punwani of Maska Bakery Unlocking the science of FATS in baking, this workshop explores different mediums like butter, ghee and a variety of oils in a sweet cookie-tasting session. Heena believes that curiosity is the secret weapon to unleashing prowess in the kitchen. "Food Nerd isn’t just about teaching; it’s about sparking curiosity and helping people understand the magic behind food elements."
ACID with Chef Payal Shah of Kobo Fermentary This workshop explores the history of Indian vinegars, topped off with a hands-on vinegar-making experience. "Acid is incredibly complex and transformative; it’s a magical element that can redefine a dish when used wisely," says Payal, who will be doing both a tasting and a demo in her session.
HEAT with Chef Gresham Fernandes of Bandra Born Gresham explores the transformative power of temperature. How did humans use heat sources to make food more delicious? From jammy eggs to dehydrated jerky, Gresham taps into decades of culinary expertise. "My cooking swings between simplicity and experimentation. It’s about creating dishes that speak; like cooking for a blind person, where flavour is all that matters."

Organiser Rohita Madappa, of Two Tigers and Co, believes the heart of the festival lies in its collaborative spirit. “The Food Nerd Festival brings together our collective expertise in food culture and design thinking, to create a collaborative hub for everyone who is passionate about food. Through our hands-on labs and interactive workshops from the Industry's best, it brings global food culture, history and techniques straight to home kitchens. We want to make the spaces of food an exciting, approachable experience for all by shifting away from formulaic dining experiences.”
The festival is organised by Edible Issues, a food & design collective rooted in research to foster thought and conversation; Two Tigers and Co, a marketing agency that specializes in crafting impactful intellectual properties; and Goya, an award-winning food & culture publication from the Indian subcontinent.
