A Simple Coconut & Green Beans Stir Fry

This beans and green gram thoran is a dish we return to again and again. Between the lightly sautéed beans, a generous sprinkling of coconut, and the gentle bite of green gram, this dish is full of texture, high on protein and simply top notch on flavour.
Ingredients
1 cup green gram
1/4 kilo long beans
Turmeric powder, a pinch
1 tbsp coconut oil
1 tsp black mustard seeds
1 sprig curry leaves
6 shallots, chopped
3 green chillies, slit,
1/2 cup grated coconut
3 tbsp water
Salt, to taste
Method
In a pot of water, boil the green gram with a pinch of salt, until soft. Do not overcook.
In a pan, add the mustard seeds to hot coconut oil.
After it sputters, add in the onion, curry leaves, green chilli, and turmeric.
Now add in beans, a pinch of salt, and water, and cook with the lid on for about a minute.
Now remove the lid, add in the green gram and coconut, and mix gently.
